Tech question for those well-traveled

In June of next year I'm considering doing the full Camino de Santiago in Spain. I'm anticipating it to take 40-45 days.

Here's the kicker – I work remote and am going to shoot to only take maybe 5-8 days of PTO for this. For the rest of the time, I'll be working after the day's hike to the next town (time change puts my start time around 3pm in Spain). June is a very light work-month for me, so theoretically this is manageable.

This plan will require decent internet access.

My question for you all: have you heard of anything that can help me internet-wise here? I can't count on every place I stop in to have good wifi, so having a backup data plan would be ideal.
